Chocolate Potato Cake – (June 2022)

Chocolate Potato Cake

From the Keepsake Edition Cook book “Bon Appetit” from the Lady Minto Hospital Auxiliary in Cochrane Ontario. (No Date) 

 

Ingredients

1 cup soft butter 

2 cups sugar

3 eggs

1 1/2 cups mashed potato

2/3 cup evaporated milk

1/3 cup of water

1 tbsp vinegar

1 cup raisins

1 cup nuts (optional)

2 cups of flour

2 tsp baking power

1/2 tsp baking soda

1/4 tsp salt

4 tsp cinnamon

2 tsp cloves

1/3 cup of cocoa power

1 tsp nutmeg

 

Directions:

Line bottom of 13x9x2 inch baking pan with waxed paper. Sift Flour, baking powder, soda, salt, cloves, nutmeg, cinnamon and cocoa together. Cream butter and sugar. Beat in eggs until light and fluffy. Beat in potato. Mix milk, water and vinegar. Alternatively add milk mixture and sifted dry ingredients. Mix until well blended. Stir in raisins and nuts. Pour into prepared pan. Bake in moderate oven (350 degrees) 50-55 minutes or until toothpick inserted in center comes out clean.
